Step 2: Blender Muffin Magic – Combine All Wet & Dry

Once your oat flour is ready, the real magic begins! There’s no need for separate bowls or tedious mixing.   • ½ cup (117 g) packed light brown sugar
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon

  • 1 teaspoon vanilla extract

  • ½ cup (123 g) milk, (or non-dairy milk)
  • ¼ cup (53 g) oil, any preferred
  • 1 large egg
  • ¾ cup (66 g) old fashioned rolled oats, (use certified gluten free oats)
  • (optional mix-ins) 1 cup chocolate chips, 1 ½ cups berries, ¾ cup chopped nuts or coconut

Instructions

  1. Preheat your oven to 350ºF (175ºC). Lightly grease 12 standard muffin tin cups or line them with paper muffin liners. This recipe will yield 12 muffins without mix-ins, and can make up to 15 muffins if you add optional mix-ins.
  2. To make the oat flour, place 2 cups of old-fashioned rolled oats into a high-powered blender or food processor. Blend the oats until they become a fine, powdery flour.   3. Add the brown sugar, baking powder, cinnamon, baking soda, salt, vanilla extract, plain yogurt, milk, oil, and the large egg to the blender with the oat flour. Blend all the ingredients together until thoroughly combined and smooth, scraping down the sides of the blender with a spatula halfway through to ensure everything is incorporated. The batter will appear quite thin at this stage.
    ½ cup (117 g) packed light brown sugar, 1 teaspoon baking powder, 1 teaspoon ground cinnamon, ½ teaspoon baking soda, ¼ teaspoon salt, 1 teaspoon vanilla extract, ½ cup (123 g) plain yogurt, ½ cup (123 g) milk, ¼ cup (53 g) oil, 1 large egg
  4. Add the remaining ¾ cup of whole old-fashioned rolled oats to the blender. Pulse the blender 2-3 times, just until the oats are incorporated into the batter but not finely ground. This step adds texture and helps thicken the batter. If using any optional mix-ins (like chocolate chips or berries), gently stir them into the batter by hand at this point.

  5. Immediately divide the muffin batter evenly among the prepared muffin cups. Do not let the batter sit for too long as it will thicken. Bake for 17-20 minutes, rotating the muffin pan halfway through the baking time to ensure even browning. The muffins are perfectly baked when their tops are set, lightly golden, and a toothpick inserted into the center comes out clean.
  6. Allow the muffins to cool in the muffin pan for about 5 minutes before carefully transferring them to a wire rack to cool completely. Store any leftover muffins in an airtight container at room temperature for up to 3 days, or in the refrigerator for up to 5 days. These muffins also freeze beautifully for up to 3 months.

To create dairy-free oat flour muffins, simply replace the plain yogurt in the recipe with an equal amount of unsweetened applesauce. For the milk, substitute it with your preferred dairy-free alternative, such as oat milk, almond milk, or soy milk. The dairy-free batter might contain a little more moisture, so you may need to extend the baking time by an additional 1-2 minutes to ensure they are fully cooked through.

Using pre-made oat flour

If you prefer to make these muffins without using a blender, you will need to purchase ready-made oat flour. First, in a large mixing bowl, whisk together all the dry ingredients: the oat flour, baking powder, cinnamon, baking soda, and salt. In a separate bowl, whisk together the wet ingredients: the brown sugar, yogurt, egg, milk, oil, and vanilla extract until well combined. Gradually add the liquid ingredients to the dry ingredients, mixing just until everything is combined and there are no dry streaks. Be careful not to overmix.
