An absolutely fantastic recipe! I won a soup/chili contest with it, and since then, numerous people have asked me for the recipe. Remarkably, one of those individuals went on to win a chili contest with it themselves! At home, we particularly enjoy serving it with sturdy tortilla chip scoops – it’s perfect for dipping.

Ingredient Spotlight: Tips for a Perfect Chili

Crafting the perfect Buffalo Chicken Chili starts with understanding your ingredients. Here’s a closer look at each component and how to make the most of them for an unforgettable dish.

  • Chicken: The recipe suggests boneless, skinless chicken breasts for their lean profile and ability to shred beautifully. However, don’t hesitate to substitute boneless chicken thighs for an even richer flavor and juicier texture. Cooked ground chicken can also be used if you prefer a different consistency; the cooking time will remain consistent across these options. Ensure chicken is fully cooked before shredding.
  • Ranch Seasoning: A single dry ranch seasoning packet is key to achieving that classic, tangy ranch flavor that perfectly complements buffalo spice. For those following a gluten-free diet, always check the label, but Hidden Valley Ranch brand is generally a reliable gluten-free option. This packet adds a complex layer of herbs and creaminess without needing additional fresh ingredients.
  • Beans: White beans, such as Great Northern, navy beans, or cannellini beans, are ideal for this recipe as their mild flavor and soft texture blend seamlessly with the creamy consistency of the chili. They absorb the buffalo and ranch flavors wonderfully. However, many readers have successfully experimented with and praised the use of black beans or kidney beans for a heartier, more visually contrasting chili. Feel free to choose based on your preference.
  • Hot Sauce: Frank’s Red Hot Sauce is my go-to choice for its authentic buffalo flavor and balanced heat. The beauty of this recipe is its adaptability to your preferred spice level, much like traditional buffalo chicken wings. Starting with 1/4 cup will provide a pleasant, mild warmth, while increasing to 1/2 cup will deliver a medium heat that’s more characteristic of buffalo dishes. Adjust freely to suit your palate.
  • Cream Cheese: For the ultimate creamy results, it’s crucial to soften your cream cheese to room temperature before adding it to the chili. This ensures it melts smoothly and incorporates fully, preventing lumps. While full-fat cream cheese offers the richest and silkiest finish, light cream cheese can be substituted, though it might not blend in quite as smoothly. Both options will still deliver a delicious, creamy texture.
  • Diced Tomatoes: Fire-roasted diced tomatoes impart a subtle smoky depth that I personally adore in this chili. Their slightly charred flavor adds another dimension. However, any good quality canned diced tomatoes will work perfectly well if fire-roasted varieties aren’t available or to your taste. Remember to drain them before adding to control the liquid content.
  • Additional Veggies: While corn adds a touch of sweetness and texture, this chili is incredibly versatile for incorporating other vegetables. Consider adding diced celery, bell peppers (red, green, or yellow), or even shredded carrots for added nutrients and color. If corn isn’t your favorite, feel free to omit it. Dive into the comments section of the full recipe for even more creative veggie ideas from fellow chili enthusiasts!
  • Optional Seasonings: For those who love to customize, a dash of extra chili powder can deepen the savory notes, ground cumin can add an earthy warmth, paprika provides a mild smokiness and color, and a squeeze of fresh lime juice at the end can brighten all the flavors. These additions are entirely optional but can take your chili to the next level.

Step 1: The Effortless Dump and Go Prep

If the award-winning taste alone isn’t enough to convince you, the incredibly easy prep work certainly will be. Simply combine the raw chicken breasts, all the dry seasonings, drained beans, diced tomatoes, and chicken broth directly into your slow cooker. Give everything a good stir to ensure it’s well combined. Then, set it and let it cook. On a low heat setting, your chili will be ready in approximately 6-8 hours, or if you’re short on time, cook on high for 3-4 hours.

All the initial ingredients for the buffalo chicken chili, including raw chicken, beans, tomatoes, broth, and seasonings, are carefully placed into a slow cooker.

Step 2: Perfect Shred Time

Once the chicken is thoroughly cooked and tender, it’s time to shred it. This can be easily done directly in the pot using two forks, pulling the chicken apart until it reaches your desired consistency. Alternatively, for a more controlled shred, you can carefully remove the cooked chicken breasts with a slotted spoon, place them on a cutting board, shred them, and then transfer the shredded chicken back into the slow cooker to rejoin the chili.

Two forks are used to easily shred the tender cooked chicken breasts directly in the slow cooker, blending them into the chili base.

Step 3: The Creamy Finish

The final touch to this incredible chili is the addition of cream cheese, which creates its signature creamy texture. Add the softened block of cream cheese to the hot chili. Allow it to sit for about 5 minutes; the residual heat will help it soften further. Then, stir vigorously until the cream cheese is fully incorporated and the chili becomes wonderfully smooth and luscious. I’ve found that full-fat cream cheese generally melts into a smoother consistency, but both full-fat and light cream cheese work wonderfully to achieve that desirable creaminess. If you’re looking for an alternative to cream cheese, heavy cream or sour cream can also be used for a similar effect, offering slight variations in flavor and richness.

A block of softened cream cheese is carefully added to the hot buffalo chicken chili in the slow cooker, preparing for the final creamy stir.

Frequently Asked Questions: Freezing Your Chili

A common question with creamy soups and stews is about freezing. While most chili recipes freeze without a hitch, the presence of cream cheese in this recipe can make the freezing process a little trickier. Dairy-based sauces can sometimes separate or become grainy after freezing and thawing.

If you plan to freeze this buffalo chicken chili, I recommend reheating it slowly over low heat on the stovetop or in the slow cooker. To restore its creamy texture, you can add additional fresh cream cheese, a sprinkle of freshly grated cheese, or a slurry of 1-2 tablespoons of cornstarch mixed with an equal amount of cold water. Stir this in gradually while reheating to help thicken and smooth the chili back to its desired consistency.

For an optimal make-ahead freezer meal, you can prepare the chili completely, but omit the cream cheese in the final step. Once the chili has been thawed and gently rewarmed, then add the softened cream cheese and stir it in until smooth. This method helps maintain the perfect creamy texture upon serving.

Elevate Your Bowl: Yummy Toppings and Sides

Buffalo chicken chili is a hearty and satisfying meal on its own, but it truly shines when paired with the right toppings and side dishes. If you’re serving this recipe at a party or aiming for a show-stopping presentation, consider these excellent accompaniments:

For a guaranteed hit, especially for dinner parties or chili contests, I strongly recommend offering at least these three essentials: generous blue cheese crumbles, sturdy tortilla chips for scooping, and a sprinkle of fresh cilantro for brightness. Ingredients

  • 1 ½ pounds boneless chicken breasts
  • 14.5 ounce can Great Northern beans, drained
  • 14.5 ounce can fire roasted diced tomatoes, drained (can substitute regular diced tomatoes)
  • 14.5 ounce can chicken broth (read label to make sure it’s gluten free)
  • ¼-½ cup buffalo wing sauce*, I used Frank’s Red Hot
  • 1 package ranch dressing mix envelope (Hidden Valley brand is gluten free)
  • 14.5 ounce can sweet corn kernels, drained
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • ½ teaspoon celery salt
  • ½ teaspoon dried cilantro
  • ¼ teaspoon salt
  • 8 ounce cream cheese**, softened
  • Optional toppings: tortilla chips, fresh cilantro, blue cheese crumbles, chopped celery, additional hot sauce

Equipment

  • Slow Cooker
  • Santoku Knife

Instructions

Slow Cooker Directions:

  1. In a 5 quart slow cooker, combine all the ingredients except the cream cheese and any desired toppings. This includes the boneless chicken breasts, drained Great Northern beans, drained fire-roasted diced tomatoes, chicken broth, buffalo wing sauce, ranch dressing mix, sweet corn kernels, onion powder, garlic powder, celery salt, dried cilantro, and salt. Stir everything thoroughly to ensure it is well mixed.

  2. Cover the slow cooker and cook on high for 3-4 hours, or on a low setting for 6-8 hours, until the chicken is cooked through and tender enough to shred easily.

  3. Once the chicken is cooked, use two forks to shred the chicken directly in the slow cooker. Alternatively, you can use a slotted spoon to remove the chicken to a cutting board, shred it there, and then return the shredded chicken to the pot. This ensures even distribution throughout the chili.

  4. Add the softened cream cheese to the shredded chicken and chili mixture. Allow it to sit for approximately 5 minutes to soften further from the heat. Then, stir well until the cream cheese is fully incorporated and the chili develops a smooth, creamy consistency. Serve immediately with your favorite optional toppings.

Instant Pot Directions:

  1. Place all the ingredients into your Instant Pot, EXCEPT for the beans and cream cheese. Ensure the chicken breasts are submerged in liquid. Secure the lid and set the valve to sealing. Cook on HIGH PRESSURE for 15 minutes. After cooking, allow a natural pressure release for 10 minutes, then carefully perform a quick release for any remaining pressure.

  2. Once the pressure has fully released, carefully open the Instant Pot. Use two forks to shred the chicken directly in the pot, or remove the chicken to a cutting board to shred, then return it to the pot.

  3. Finally, add the drained beans and the softened cream cheese to the Instant Pot. Stir vigorously until the chili becomes wonderfully creamy and smooth, ensuring the cream cheese is fully incorporated. Serve hot with your desired toppings.

Notes

  • *Start with ¼ cup buffalo sauce, especially if you are serving children or prefer a milder heat. I personally often use ½ cup, as I find it delivers a fantastic spice level that truly embodies the buffalo flavor.
  • **I have successfully made this chili using both light and regular cream cheese. Both options yield delicious results!
