  • 1 tablespoon paprika
  • 1 tablespoon brown sugar
  • ½ teaspoon cumin
  • ½ teaspoon garlic powder

  • ¼ teaspoon cayenne pepper

  • ¾ – 1 cup BBQ sauce, I use Sweet Baby Ray’s
  • 6 Brioche buns, for serving
  • fresh pineapple, cored and sliced , for serving

Cilantro Jalapeño Slaw

  • 14 ounce bagged slaw mix
  • ½ cup fresh cilantro, chopped
  • 1 tablespoon fresh jalapeño, minced
  • 13 ounce coleslaw dressing

Instructions

 

  • In a small bowl, thoroughly mix together paprika, brown sugar, cumin, garlic powder, onion powder, cayenne pepper, and kosher salt. Evenly rub this flavorful seasoning blend all over both sides of the chicken breasts or thighs. 
    2 pounds boneless, skinless chicken breasts, 1 tablespoon paprika, 1 tablespoon brown sugar, ½ teaspoon cumin, ½ teaspoon garlic powder, ½ teaspoon onion powder, ¼ teaspoon cayenne pepper, ½ teaspoon kosher salt
  • Pour the apple cider vinegar and water into the crockpot. Carefully place the seasoned chicken on top of the liquid. Cook the chicken on high for 3 hours or on low for 5 hours, until it is very tender. Once cooked, use two forks to easily shred the chicken directly in the slow cooker. Finally, pour in your preferred BBQ sauce and stir until all the shredded chicken is well coated.

  • For the pineapple slices, grill them for about 4 minutes per side, or until you see desirable char marks. Alternatively, place the pineapple slices on a baking sheet and broil for 4 minutes per side until caramelized.
  • Meanwhile, prepare your cilantro jalapeño slaw. In a large bowl, combine the bagged slaw mix, fresh chopped cilantro, and minced fresh jalapeño. Pour in the coleslaw dressing and stir everything together until well combined and creamy.

  2. Add water, apple cider vinegar, and ¾ cup of chicken broth to the Instant Pot. Secure the lid and cook on HIGH PRESSURE for 7 minutes. If using frozen chicken breasts, increase cooking time to 10 minutes. Allow a natural release of pressure for 5 minutes, then perform a quick release of any remaining pressure.
  3. Carefully remove the lid. Ladle out and discard about ½ cup of the cooking liquid. Use two forks to shred the chicken on a cutting board, or for an even faster method, use a hand mixer directly in the Instant Pot to shred the chicken. Stir in the BBQ sauce until the chicken is evenly coated. Serve immediately or keep warm.
