  2. Meanwhile, prepare the caramel. Place ¾ cup (150g) of granulated sugar in a medium, heavy-bottom saucepan (one with a 7-8-inch bottom works best) over medium heat. Once it begins to melt (about 2 minutes), lower the heat to medium-low and continue cooking without stirring. Let it cook until it starts to brown, about 5 minutes. You can occasionally tilt and swirl the pan to incorporate any unmelted sugar. Continue cooking gently, still without stirring, until the sugar is fully melted and becomes a dark amber brown, which takes about 5 more minutes. Turn off the heat.
