Gluten-Free Lemon Chicken Piccata (Flour-Free)

I tested this lemony gluten-free chicken piccata many ways because I didn’t want to sacrifice flavor or a delicate, crisp golden crust. The solution is simpler than you might expect — no wheat flour or specialty GF blends required. The pan-fried cutlets finish in a rich buttery lemon-caper sauce and the whole meal is ready in about 30 minutes.

Who doesn’t want a restaurant-quality dinner without the fuss? I tested different gluten-free dredges and one clear winner emerged.

Gluten-Free Chicken Piccata With a Perfect Dredge

Yes, you can swap in an all-purpose gluten-free flour blend and get decent results, but I wanted the best, most authentic texture: a light, crisp crust that holds up in the sauce. I tried several options commonly found in GF kitchens — gluten-free all-purpose blends, cornstarch, and white rice flour.

GF flour browned acceptably, but the coating softened quickly in the sauce. Cornstarch browned nicely and provided a neutral flavor, making it a good option if you already have it on hand. White rice flour edged out cornstarch: it produced a lighter, crispier crust that held up in the sauce because rice flour doesn’t absorb as much oil as other flours.

Final verdict: skip standard flour and GF all-purpose blends if you want the crispiest piccata. White rice flour is the preferred choice (sweet rice flour also works). Cornstarch is a solid runner-up if you don’t want to buy another ingredient. The recipe will still work with GF flour, but expect the coating to soften sooner.

Let’s Make This Together

(Below are step-by-step photos and streamlined instructions. For the full recipe amounts and the recipe card, see the recipe section further down.)

Prep the chicken cutlets

Chicken piccata comes together fast because thin cutlets cook in minutes. Instead of buying pre-sliced cutlets, butterfly the chicken breasts: slice each breast lengthwise until it opens like a book, then cut down the center to make two cutlets. If the thickness is uneven, gently pound with a meat mallet to even them out.

Season and dredge

Season both sides of the cutlets generously with salt and pepper. Spread white rice flour (or cornstarch) on a plate and dredge the cutlets on both sides, shaking off excess. Transfer them to a baking sheet and let rest a few minutes while you prep the sauce — this helps the coating adhere. For a thicker crust, dredge a second time before cooking.

Perfect pan fry

Use a mix of butter and olive oil in a large sauté pan to encourage golden browning and deepen flavor. Heat the fat over medium-high, then fry the cutlets in batches so they don’t crowd the pan. Cook about 3 minutes per side until golden and cooked through. Transfer to a platter and tent loosely with foil to keep warm while you make the sauce.

Just-right lemon caper sauce

The pan sauce is simple but balanced: bright lemon, savory capers, and a silky butter finish. Sauté thinly sliced shallot and lemon slices in the pan’s residual oil and butter until softened, scraping up browned bits. Deglaze with a splash of dry white wine, or chicken stock if you prefer, then add chicken stock and simmer to reduce slightly.

Turn the heat to low and stir in the remaining butter, capers, lemon juice, salt, and pepper. Return the chicken to the pan just to rewarm in the sauce. Garnish with chopped parsley if desired and serve immediately.

Because this weeknight dinner cooks quickly, plan a side so everything finishes together. Boil pasta before you fry the chicken so it cooks while the cutlets cook. For a green side, roasted zucchini is an easy, hands-off option that comes out crisp and golden while you make the piccata.

Ingredients

  • 3 boneless, skinless chicken breasts, butterflied and cut lengthwise to make 6 cutlets
  • ¼ cup white rice flour, or cornstarch
  • 3½ tablespoons butter, divided
  • 2½ tablespoons olive oil
  • 1 shallot, peeled, halved, and thinly sliced
  • 2 small lemons — 1 thinly sliced (seeds removed), the other for 2 tablespoons juice
  • ¼ cup dry white wine, or replace with chicken stock
  • ½ cup gluten-free chicken stock
  • 4 teaspoons drained capers
  • ½ teaspoon salt, plus more for seasoning
  • ⅛ teaspoon pepper, plus more for seasoning
  • Chopped fresh parsley for garnish (optional)

Equipment

  • Santoku or chef’s knife
  • 3-quart sauté pan
  • Plate or shallow bowl for dredging

Instructions

  1. Lay the 6 chicken cutlets on a baking sheet and season both sides with salt and pepper. Place the rice flour on a plate and dredge both sides of the chicken, shaking off excess. Return to the baking sheet.
  2. In a large, deep skillet over medium-high heat, heat 1½ tablespoons butter and 1½ tablespoons olive oil. Working in two batches, add three cutlets and fry until golden and cooked through, about 3 minutes per side. Transfer to a platter and tent loosely with foil. Repeat with the remaining butter, oil, and chicken.
  3. After removing all chicken, add the shallot and lemon slices to the skillet and sauté, scraping up browned bits, for 2–3 minutes. Add the wine and stock, scraping the pan, and simmer until slightly reduced, about 3 minutes.
  4. Reduce heat to low and stir in the remaining 1 tablespoon butter, capers, lemon juice, salt, and pepper. Return the chicken to the skillet to warm through in the sauce. Garnish with parsley if desired and serve immediately.
