  • cup Parmesan cheese, freshly grated
  • ¾ cup crushed gluten-free potato chips, about 2 ounces
  • ¾ teaspoon paprika
  • 4 tablespoons melted butter
  • 1 ½ pounds mild white fish, (I used tilapia)

Truly Amazing Tartar Sauce

  • ½ cup mayonnaise, regular or light
  • 2 tablespoon sweet relish
  • 1 tablespoon white wine vinegar
  • 1 tablespoon capers
  • 1 teaspoon whole-ground mustard
  • teaspoon kosher salt
  • pinch freshly ground pepper
  • lemons,, for serving

Instructions

  1. Preheat oven to 400ºF (200°C). Spray a baking sheet with cooking spray and set aside.
  2. In a small bowl, combine the crushed Chex cereal, Parmesan cheese, crushed potato chips, paprika, and melted butter. Mix well until all ingredients are evenly coated.
  3. Pat the fish fillets thoroughly dry using paper towels. Place the dried fish on the prepared baking sheet. Evenly sprinkle and gently press the crunchy topping mixture over the top of each fillet. Bake for 12-15 minutes (depending on the thickness of the fish) or until the fish flakes easily with a fork and reaches an internal temperature of 140ºF (60°C). While the fish bakes, prepare the tartar sauce.
  4. For the tartar sauce, place all tartar sauce ingredients (mayonnaise, sweet relish, white wine vinegar, capers, whole-ground mustard, kosher salt, and freshly ground pepper) in a mini prep food processor or mini chopper. Pulse until well mixed but still chunky, not pureed. Alternatively, finely chop the capers and stir all ingredients together in a bowl. Serve the freshly made tartar sauce with your hot, crispy fish.
