- 1 ½ teaspoons baking soda
- 1 teaspoon salt
- 1 cup (245 g) milk or non-dairy milk
- ½ cup (107 g) oil, any preferred
- 2 large eggs
- 2 teaspoons vanilla extract
- 1 cup (240 g) boiling water

- To the flour mixture, add the milk, oil, eggs, and vanilla extract. Mix on medium speed until all ingredients are just well combined. Reduce the mixer speed to low, and very slowly add the boiling water to the cake batter. Once the water is fully incorporated, increase the speed to high and mix for 1 minute to aerate the batter.
