Discovering Naturally Gluten-Free Thanksgiving Dishes
Before diving into our curated list of recipes, let’s highlight some classic Thanksgiving staples that are inherently gluten-free, requiring no special modifications. This knowledge can simplify your meal planning significantly, allowing you to focus on preparing safe and delicious dishes. However, it’s crucial to always exercise caution and **double-check all ingredients** before serving. Hidden gluten can lurk in unexpected places like soy sauce, Worcestershire sauce, certain broths, condensed soups, salad dressings, and various dips and sauces. Opt for certified gluten-free versions of these ingredients when possible to ensure a truly safe dining experience.
- **Roasted Turkey:** The magnificent center-piece of your holiday table is naturally gluten-free! Just be sure that any brines, rubs, or stuffings you use are also certified gluten-free to avoid any accidental contamination.
- **Jello Salads:** Many gelatin-based salads are free from gluten, offering a colorful and sweet addition to your spread.
- **Mashed Potatoes:** Made with wholesome potatoes, milk or cream, and butter, these comforting spuds are typically safe. However, always avoid instant mashed potato flakes unless explicitly certified gluten-free.
- **Roasted Vegetables:** Simple roasted carrots, tender Brussels sprouts, crisp green beans, or delicate asparagus are not only healthy but also naturally gluten-free, serving as excellent, flavorful side dishes.
- **Cranberry Sauce:** Both homemade and many commercially available canned varieties are inherently gluten-free, providing that essential tart and sweet balance to your meal.
- **Sweet Potatoes with Marshmallow Topping:** A beloved, classic dish that is usually safe. Just ensure your chosen marshmallows are gluten-free (most mainstream brands are, but always check the label).
- **Steamed Vegetables:** For a straightforward and healthy option, steamed vegetables like broccoli, carrots, or green beans are naturally gluten-free and can be seasoned simply for maximum flavor.
Essential Gluten-Free Thanksgiving Tips for Hosts & Guests
- **For Guests Attending a Potluck:** If you’re attending a Thanksgiving dinner as a guest, proactively offer to bring dishes you don’t want to miss out on. This thoughtful gesture alleviates pressure on the host, minimizes potential cross-contamination risks, and guarantees you have safe, delicious options to enjoy without feeling deprived.
- **Advocate for Yourself:** When dining with non-GF cooks, kindly educate them on critical aspects of gluten-free cooking, such as avoiding cross-contamination from shared utensils or surfaces, and identifying hidden gluten in ingredients. Offer to help prepare or bring specific dishes they might be unfamiliar with, ensuring your safety and peace of mind.
- **Check Your Broth:** Chicken broth is a common ingredient in countless Thanksgiving recipes. Always verify that your chosen brand is certified gluten-free, as some contain wheat derivatives. Reliable options often include College Inn, Imagine, Swanson, Kitchen Basics, Pacific Foods, Aldi’s Simply Organic, and Aldi’s Chef’s Cupboard.
- **Beware of Hidden Gluten in Seasonings and Sauces:** Thanksgiving often involves collaborative cooking, where multiple hands contribute to dishes. Be vigilant for “sneaky” gluten that can hide in unexpected places like condensed soups, broths, Worcestershire sauce, and seasoning packets. A quick, polite question to the cook can prevent a significant gluten exposure.
- **Navigate Appetizer Spreads Safely:** Grazing tables, while tempting, can be challenging for those with gluten sensitivities due to shared serving utensils and common bread components. Come prepared with your own favorite gluten-free crackers (like Simple Mills Almond Flour Crackers!) and be assertive in serving yourself first to prevent cross-contamination from communal dips.

Ingredients
- 1 recipe gluten-free bread (2 pound loaf), see recipe notes for using store-bought
- 9 ½ tablespoons butter, divided
- 3 celery stalks, diced
- 1 medium onion, diced
- ⅓ cup fresh parsley, minced
- 1 ½ teaspoon dried sage, (2 tablespoon fresh minced)
- ¾ teaspoon dried thyme, (1 tablespoon fresh minced)
- ¾ teaspoon dried marjoram, (1 tablespoon fresh minced)
- 1 ½ teaspoon salt
- ½ teaspoon pepper
- 3 large eggs
- 1 apple, peeled and diced
- 3 cups gluten-free chicken broth
Instructions
-
Begin by slicing the bread into 1/2-inch cubes and divide between two baking sheets. Let dry at room temperature for 24 hours. Alternatively, toast the bread cubes in a 225ºF oven for 30-40 minutes, stirring every 10 minutes, until thoroughly dried.
-
Liberally grease a 9X13-inch baking dish with ½ tablespoon of butter. Preheat your oven to 350°F (175°C).
-
Melt 6 tablespoons of butter in a large skillet over medium heat. Add the diced celery and onions. Cook and stir for 8-10 minutes, or until the vegetables are softened and translucent.
-
Stir in the minced parsley, dried sage, dried thyme, dried marjoram, salt, and pepper. Cook for an additional 1 minute, stirring constantly, then remove the skillet from the heat.
-
In a large mixing bowl, whisk the eggs until well combined. Add the dried bread cubes, diced apple, and the cooked butter-herb mixture. Pour the gluten-free chicken broth evenly over everything. Gently stir all ingredients together until just combined.
-
Spread the stuffing mixture evenly into the prepared baking dish. Melt the remaining 3 tablespoons of butter and drizzle it over the top of the stuffing. Cover the dish securely with aluminum foil and bake for 30 minutes. Remove the foil and continue baking for another 20-25 minutes, or until the top is golden brown and crispy.

Notes
Gluten-Free Bread Options
For the absolute best texture and flavor in your stuffing, we highly recommend using a quality homemade gluten-free bread recipe, such as our highly-reviewed gluten-free bread.
Alternatively, good quality store-bought gluten-free breads can also be used. Our preferred brands for this recipe are Canyon Bakehouse or Schar. You will typically need two loaves of store-bought bread to achieve the amount required for this recipe.
Serving Adjustments
For a smaller batch, simply halve all the ingredients and bake in an 8×8-inch baking dish.
Make-Ahead and Freezing Instructions
This stuffing can be assembled up to 24 hours in advance. Cover it securely and refrigerate until you’re ready to bake. Please note that when prepared ahead, the liquids will soak into the bread more, resulting in a slightly softer consistency.
If you plan to prepare the stuffing several days in advance, ensure the bread is thoroughly dried first. You can achieve this by letting the bread cubes sit out at room temperature for 2-3 days, or by roasting them in a 225ºF (107°C) oven for 30-40 minutes, stirring every 10 minutes. The cubes should be quite firm, similar to the texture of traditional stuffing mix, to maintain their shape and absorb moisture without becoming mushy when soaked overnight.
To freeze the stuffing, bake it according to the recipe directions and allow it to cool completely. Wrap it tightly with plastic wrap, then cover with aluminum foil, and freeze for up to one month. Thaw the frozen stuffing in the refrigerator overnight before reheating and serving.
Reheating Leftovers
If reheating thawed, previously frozen dressing, remove the plastic wrap, recover with foil, and let it sit at room temperature for 30 minutes. Bake in a 325°F (160°C) oven for 15 minutes. Then, remove the foil and bake for an additional 10-15 minutes, or until it’s heated through and the top is lightly crisped.
For individual portions, use the microwave. We recommend heating at 50% power for 1-2 minutes initially, then finishing at full power until warmed through to prevent drying out.
