Instructions

  2. To the browned beef mixture, add the chopped bell peppers, tomato sauce, diced tomatoes, 2 cups beef broth, water, brown sugar, Italian seasoning, garlic powder, salt, and pepper. Stir all ingredients well to combine. Bring the mixture to a boil, then reduce heat to low and simmer UNCOVERED for 20 minutes, allowing flavors to meld.
  3. Stir in the instant rice. Continue to simmer for 5-10 minutes, or until the rice is cooked through and tender. If you prefer a thinner soup, add additional beef broth or water to reach desired consistency. Taste and adjust seasoning with more salt and pepper, if necessary. Notes

Substituting Long Grain or Brown Rice

If you prefer using long-grain white or brown rice, prepare 2-3 cups of cooked rice (approximately ¾-1 cup uncooked) separately while the soup simmers. Add the cooked rice to the soup after it has finished simmering, just before serving. This prevents the rice from absorbing too much liquid and becoming mushy, and allows for better consistency control.

Slow Cooker Directions
  1. In a skillet, brown the ground beef, garlic, and onions until the beef is cooked through and onions are translucent (about 7-8 minutes).
  2. Transfer the beef mixture to your slow cooker along with all remaining ingredients, except for the rice.
  3. Cook on high for 3 hours or on low for 6-8 hours.
  4. Towards the end of cooking, prepare instant rice or long-grain rice separately. Stir the cooked rice into the soup just before serving, or scoop cooked rice into individual bowls and ladle the soup over it.
Instant Pot Directions
  1. Using the “Saute” function on your pressure cooker, brown the ground beef, onion, and garlic. Drain any grease if necessary.
  2. Add the remaining ingredients, except for the rice, to the Instant Pot: broth, water, diced tomatoes, bell peppers, tomato sauce, brown sugar, Italian seasoning, salt, and pepper.
  3. Stir well, secure the lid, and set the valve to “Sealing.” Cook at HIGH pressure for 5 minutes.
  4. Once cooking is complete, allow the pressure to release naturally for 5 minutes, then perform a quick release of any remaining pressure.
  5. Stir in the instant rice and simmer using the “Saute” function for another 5 minutes, or until the rice is tender. Alternatively, stir in 2-3 cups of separately cooked white or brown rice, depending on your preferred soup consistency.
Freezing Instructions

For best results when freezing, omit the rice from the recipe initially. Allow the cooled soup to freeze in serving-size portions or in large freezer bags. When you’re ready to serve, thaw and reheat the soup, then add freshly cooked rice to individual bowls. You can freeze the soup with rice in it, but be aware that the rice will absorb more liquid and alter the texture, making the soup much thicker upon thawing. You will likely need to add additional water, beef broth, or tomato sauce to thin it out when reheating.
