Mastering Gluten-Free Salmon Patties: The Secret to No-Breadcrumb Perfection

Creating delicious gluten-free meals shouldn’t mean sacrificing flavor or spending a fortune on obscure ingredients. Our mission was clear: develop a crispy, flavorful salmon patty recipe that’s naturally gluten-free without relying on traditional breadcrumbs or hard-to-find alternatives. Many conventional salmon patty recipes lean heavily on breadcrumbs for binding and texture, which presents a challenge for those avoiding gluten. We’ve cracked the code, transforming a classic comfort food into an accessible and healthier option for everyone.

Our journey began by exploring various gluten-free binders. Initially, gluten-free quick oats seemed like a promising contender, a staple in many of our highly-rated recipes, such as our moist and juicy gluten-free meatloaf. While oats did offer a decent bind during initial tests, the salmon patties proved a bit too delicate, often breaking apart when flipped in the pan. This fragility was a deal-breaker, as we prioritize ease and reliability in our recipes. We needed a binder that would create a firm, yet tender patty, capable of holding its shape beautifully through the cooking process.

The Game-Changing Power of Almond Flour

The breakthrough came with almond flour. As a common pantry item for many gluten-free and low-carb cooks, it seemed like a natural fit. The results were astounding! Almond flour proved to be a superior binder for several reasons. Its finely ground texture integrates seamlessly with the moist flaked salmon, creating a cohesive mixture that’s easy to shape. Beyond binding, almond flour’s natural oils contribute to a wonderfully crispy, golden-brown exterior when pan-fried, offering that satisfying crunch we all crave in a good salmon cake.

Another incredible advantage of using almond flour in this recipe is its neutral flavor profile. Unlike some other flours or binders that can impart an unwanted taste, almond flour allows the savory notes of the salmon and fresh herbs to truly shine. This ensures a perfectly balanced and seasoned patty every time. What’s more, its excellent binding properties are so effective that we discovered there’s no need to chill or briefly freeze the patties before cooking – a common step in many other salmon cake recipes to prevent them from falling apart. In fact, our tests showed that cooking them from room temperature actually improved their stability! This unexpected time-saver makes these gluten-free salmon patties an even quicker and easier option for any busy weeknight. It’s truly a gluten-free win we’re thrilled to share.

Key Ingredients & Smart Substitutions for Perfect Salmon Patties

Crafting delicious salmon patties relies on a few key components. Here’s a deeper dive into the ingredients and how you can adapt them to your dietary needs or pantry availability:

  • Canned Salmon: The Foundation of Flavor
While fresh salmon works beautifully (you’d need about 1½ to 2 cups of cooked, flaked salmon), canned salmon is the ultimate convenience factor for this recipe. My personal preference, and what I consider a true “game-changer,” is boneless, skinless canned salmon. While traditional canned salmon with bones and skin can be used (and is a good source of calcium), the boneless, skinless variety makes preparation much faster and more pleasant. Brands like Bumblebee, Chicken of the Sea, Starkist, Wild Planet, and Safe Catch all offer excellent boneless, skinless options in cans or convenient pouches. Regardless of your choice, remember to drain the salmon exceptionally well. I highly recommend using a fine-mesh strainer and gently pressing down to remove any excess liquid. This crucial step prevents overly moist patties that might struggle to hold their shape and achieve that desired crispness.
  • Parmesan Cheese: For Savory Depth and Texture
Freshly grated Parmesan cheese not only acts as a binder, helping the patties stay together during cooking, but it also infuses them with a wonderful salty, umami flavor. Its finely grated texture also contributes to the development of a slightly crispy exterior. For those following a dairy-free (DF) diet, you can easily omit the Parmesan. Alternatively, an equal amount of nutritional yeast can be swapped in. Nutritional yeast offers a cheesy, savory flavor without any dairy, making it a fantastic substitute.
  • Almond Flour: Our Superior Gluten-Free Binder
As highlighted, almond flour is the star binder here. Its fine consistency and natural oils ensure the patties hold together beautifully and crisp up perfectly. If almond flour isn’t available, or if you prefer a different option, an equal amount of gluten-free quick oats can be used. However, with quick oats, it’s essential to chill the mixed salmon patty mixture for at least 30 minutes before cooking. This resting period allows the oats to absorb moisture from the salmon and other ingredients, preventing them from being too fragile during frying.
  • Thoughtful Seasonings: Elevating the Flavor Profile
This recipe embraces pantry staples for convenience, but feel free to experiment with fresh herbs to brighten the flavors. Classic choices like fresh parsley, dill weed, tarragon, or chives would be delightful additions. For a different twist, consider adding a pinch of Old Bay seasoning for a Chesapeake Bay flair, a touch of cayenne pepper for a subtle kick, or some vibrant lemon zest to enhance the fresh salmon taste. A squeeze of fresh lemon juice at the end can also add a burst of brightness.

Step-by-Step Guide: Crafting Your Crispy Salmon Patties

Let’s walk through the process together! Below you’ll find detailed step-by-step instructions with helpful tips. For precise ingredient amounts, please refer to the complete recipe card below.

Start with the Right Salmon, Prepared the Right Way

The foundation of great salmon patties is, of course, the salmon itself. While any canned salmon can technically work, I’ve found that using boneless, skinless canned salmon is truly a culinary revelation. I initially tried preparing patties with traditional canned salmon and found myself frustrated with the tedious process of removing numerous tiny bones and skin – it made the whole experience less enjoyable. Discovering the boneless, skinless variety was a complete game-changer, making prep effortless. Look for it in cans or convenient pouches from popular brands like Bumblebee, Chicken of the Sea, Starkist, Wild Planet, and Safe Catch.

Crucial Prep Step: Drain Thoroughly. Before adding your salmon to the mixing bowl, it’s absolutely vital to drain it well. Even boneless, skinless packets can contain excess liquid. Transfer the salmon to a fine-mesh strainer and gently press down with the back of a spoon to extract as much moisture as possible. This step is critical for ensuring your patties bind properly and achieve that desirable crispy exterior, preventing them from becoming soggy or falling apart during cooking.

Begin with a Quick Sauté for Flavor and Texture

This initial sauté of finely diced onion and bell pepper might seem like an extra step, but it’s well worth the minimal effort. Cooking these aromatics until softened mellows their raw flavor and introduces a wonderful depth and sweetness to the patties, enhancing the overall taste and texture. Plus, there’s no need for additional cleanup! You’ll use the same pan to cook the salmon patties, making this a smart, single-pan approach. Sautéing them in a combination of olive oil and butter not only adds richness but also pre-coats the pan, creating an ideal non-stick surface for perfectly browned patties later.

Combine Ingredients, Shape Patties, and Cook to Golden Perfection

Once your aromatic vegetables have cooled slightly, it’s time to bring everything together. In a large mixing bowl, gently combine the whisked egg, almond flour, Parmesan cheese, mayonnaise, Dijon mustard, and your chosen seasonings (dill weed, parsley, garlic salt, salt, and pepper). Finally, fold in the well-drained salmon and the sautéed onion and bell pepper mixture. Mix just until combined; overmixing can make the patties tough.

Next, shape the mixture into uniform patties. For consistent sizing and quicker preparation, I find a large 3 tablespoon trigger scoop incredibly useful. Scoop out even amounts, then gently press them into ½ to ¾-inch thick patties. You can prepare these ahead of time and arrange them on a parchment-lined baking sheet until you’re ready to cook. To keep cooked patties warm while you finish subsequent batches, preheat your oven to 200°F (95°C) and place another baking sheet inside.

When it’s time to cook, add the remaining olive oil and butter to the same skillet you used for the vegetables. Heat over medium heat until shimmering. Carefully place the shaped patties into the hot skillet in a single layer, ensuring not to overcrowd the pan. My 12-inch cast iron skillet comfortably fits about six patties per batch. Cook for 3 to 4 minutes per side, or until they achieve a beautiful golden-brown crust and are cooked through to the center. If you notice them browning too quickly, simply reduce the heat slightly to ensure they cook evenly without burning.

These salmon patties are perfect for meal prep! Mix the ingredients, shape the patties, and store them covered in the refrigerator until you’re ready to cook. Serve them with a crisp side salad, like our 5-minute creamy coleslaw, a simple garden salad, or a refreshing tangy marinated green bean salad for a complete and satisfying meal.

Air Frying Gluten-Free Salmon Patties

Good news for air fryer enthusiasts! These gluten-free salmon patties cook beautifully in an air fryer, offering a convenient, often quicker, and less oily alternative to pan-frying. To air fry, simply shape the patties as directed in the main recipe. Preheat your air fryer to 400°F (200°C) for a few minutes. Place the patties in a single layer in the air fryer basket; you’ll likely need to cook them in batches to avoid overcrowding, which can lead to uneven cooking. Air fry for 8-10 minutes, flipping them halfway through, until they are golden brown and cooked through. For easier cleanup, you can line the bottom of your air fryer basket with a small piece of parchment paper. For an extra “fried” crispiness, lightly spray each side of the patties with olive oil before air frying. This method yields a wonderfully crispy exterior with a tender, moist interior every time!

Love fish cakes? This recipe is incredibly versatile! You can easily adapt it to make delicious gluten-free fish cakes using other types of canned or cooked flaked fish. Simply substitute the salmon with 15-16 ounces of well-drained canned tuna, mackerel, or any other cooked, flaked fish. All other ingredients and instructions remain the same, allowing you to enjoy a variety of flavorful fish cakes with minimal effort.

If you’ve been missing old-school, vintage salmon cakes, this gluten-free recipe will bring back all those fond memories. They are just as good, if not better, than you remember them.

Ingredients

  • 2 tablespoons olive oil, divided
  • 2 tablespoons butter, divided
  • 1 small yellow onion, finely diced
  • ½ red bell pepper, seeded and finely diced
  • 1 large egg
  • ½ cup almond flour
  • ⅓ cup freshly grated Parmesan cheese, omit for dairy-free or use nutritional yeast
  • 2 tablespoons mayonnaise
  • 1 teaspoon Dijon mustard
  • 1 teaspoon dried dill weed
  • 1 teaspoon dried parsley
  • ½ teaspoon garlic salt
  • ¼ teaspoon salt
  • ⅛ teaspoon freshly ground black pepper
  • 15 ounces boneless, skinlesscanned salmon or packets, well drained (see recipe notes)

Quick Tartar Sauce

  • ⅓ cup mayonnaise
  • 3 tablespoons sweet relish
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste

Equipment

  • 12 inch cast iron skillet
  • 3 Tbs Trigger Scoop
  • Flexible Metal Spatula

Instructions

  1. Combine the ingredients for the quick tartar sauce in a small bowl. Stir well and set aside or refrigerate until ready to serve.
  2. In a large skillet, heat 1 tablespoon of olive oil and 1 tablespoon of butter over medium heat. Add the finely diced yellow onion and red bell pepper. Sauté, stirring occasionally, until the vegetables are softened and translucent, about 5-7 minutes. Remove the skillet from the heat and set the cooked vegetables aside. Do not clean the pan; it will be used for frying the patties.
  3. In a large mixing bowl, whisk the large egg until well combined. Then, stir in the almond flour, Parmesan cheese (or nutritional yeast), mayonnaise, Dijon mustard, dried dill weed, dried parsley, garlic salt, salt, and freshly ground black pepper. Once these ingredients are thoroughly mixed, gently fold in the well-drained salmon and the sautéed onion and bell pepper mixture. Ensure all ingredients are evenly incorporated.
  4. Shape the mixture into patties. I recommend using a large, 3 tablespoon cookie scoop to ensure consistent sizing. Scoop a level amount of the mixture and gently form it into ½ to ¾-inch thick patties. You can transfer these shaped patties to a parchment-lined baking sheet and refrigerate them if prepping ahead, or proceed directly to cooking. To keep cooked patties warm, place a baking sheet in a 200°F (95°C) oven.
  5. Return the same skillet used for the vegetables to medium heat. Add the remaining ½ tablespoon olive oil and ½ tablespoon butter. Once the butter is melted and shimmering, carefully place the salmon patties into the skillet in a single layer, making sure not to overcrowd the pan. A 12-inch cast iron skillet typically fits about 6 patties at a time, so you may need to cook in batches depending on your pan size. Fry for 3 to 4 minutes per side, or until the patties are beautifully golden brown and cooked through. If the patties are browning too quickly before cooking through, reduce the heat slightly.
  6. As each batch of patties finishes cooking, transfer them to the warm baking sheet in the oven to keep them hot. For subsequent batches, add another ½ tablespoon of olive oil and ½ tablespoon of butter to the pan as needed. Serve the crispy gluten-free salmon patties immediately with the prepared tartar sauce and your favorite side dishes.

Notes

Draining Salmon

Even boneless, skinless canned salmon or packets may contain residual liquid. To ensure your patties hold their shape and become delightfully crispy, always drain the salmon thoroughly in a fine-mesh strainer, pressing down gently with the back of a spoon. Excess moisture is the primary culprit for fragile or soggy patties.
